Ingredient of the Month: Pomodori (tomatoes)

July is the start of the tomato season in Northern Italy, these sun-kissed fruits are just beginning to reach their full potential. Bursting with juiciness and packed with flavor, they are a cornerstone of Italian cuisine, enhancing the taste and visual appeal of countless dishes. Whether you’re enjoying them fresh in a simple salad or cooking them down into a rich sauce, tomatoes bring a vibrant color and a refreshing taste that perfectly captures the essence of summer. Their versatility makes them a beloved ingredient in a wide range of culinary creations, from appetizers to main courses, ensuring that every bite is a celebration of the season’s bounty. here are a few delicious ways to enjoy them:

Caprese Salad: A classic Italian dish featuring ripe tomatoes, fresh mozzarella, and basil, drizzled with olive oil and balsamic vinegar.

Bruschetta al Pomodoro: Toasted bread topped with a mixture of diced tomatoes, garlic, basil, and olive oil.

Pasta al Pomodoro: Simple pasta with a fresh tomato sauce made from ripe cherry tomatoes, garlic, and basil.

Tomato Tart: A savory tart with a flaky crust, filled with a mixture of tomatoes, soft creamy goats cheese, and herbs.

RECIPE OF THE MONTH: Panzanella

Celebrate beautifully ripe tomatoes with this refreshing and flavorful Tuscan bread salad featuring ripe tomatoes and fresh herbs.

Ingredients:

  • 4 cups day-old Italian bread, cut into thick slices and then torn up by hand

  • 200g/7 oz ripe tomatoes a variety of tomatoes is recommended, diced and sliced for variety

  • 1 cucumber, semi peeled and thickly sliced

  • 1 small red onion, thinly sliced

  • 10 big juicy green olives that have been cut around the stone into large slivers

  • Bunch of fresh basil leaves

  • 2 teaspoons of capers (those packed in salt are best)

  • 1/4 cup extra virgin olive oil

  • 2 tablespoons red wine vinegar

  • 2 anchovies that you have smashed with the back of your knife until they are a pulp

  • 1 garlic clove also smashed with the back of a knife until it is pulp

  • Salt and freshly ground black pepper, to taste

Instructions:

  1. In a large bowl combine tomatoes, cucumber, red onion, capers, olives, torn-up slices of bread and basil leaves.

  2. Make the dressing by combining the smashed anchovies, smashed garlic, olive oil, vinegar, salt and pepper, mix until combined (this could be done in a blender).

  3. Add the dressing to the salad and toss gently, add salt to taste and let it sit for 20-30 minutes before serving.

For the best flavor, use the ripest tomatoes you can find and let the salad sit for a bit before serving to allow the bread to soak up the delicious dressing and tomato juices.

Pair this dish with a chilled Italian Rosé like a Chiaretto, which offers bright acidity and floral notes that complement the fresh flavors of the Panzanella perfectly.
